Last week I began a 3-part Mango Series here on A Skinny Dish. Along with a deliciously healthy Coconut-crusted Tofu w/ Mango Salsa recipe post, I listed out a number of health benefits which should have convinced you to stock up on some Mangos now while they’re in season.

With the temperature rising so rapidly, especially here in Dubai, summer seems to be approaching fast & fiery. Lucky for us, mangos are back in season to help us cope with the unforgiving heat. Continue reading

Nutella Chocolate Milk

nutella milk 2 Greetings from Bangkok, Thailand! I came back to visit my home town since last week just in time for the water festival along with the blistering heat. So a few days ago after desperately craving for cold drink (as a typical Indian would say), I made my self a chilled glass of Nutella chocolate milk from the hazelnuts I soaked from the previous night. Rose Amaranth Porridge & Poached Rhubarb

amaranth

After regularly passing packets of Amaranth in the grains’ section at local the Organic store, I finally decided to pick one up and check out the text at the back. Perfect for porridge? Well that pretty much sealed the deal. Continue reading

mint cup 2

Having had a few handfuls of fresh mint leaves and baby spinach left in the fridge along with a new packet of Cacao Butter from my favourite superfood brand Be Super Natural, it was time to make some yummy raw chocolates. A healthier, vegan, grain-free and gluten-free alternative to standard pasta that’s much lower in carbs! Continue reading

Since this past Monday was St. Patrick’s day, I decided to have my own little commemoration despite the fact that I have no Irish in me whatsoever. But hey, nothing wrong with getting into the spirit of things right? I did not wear any shamrock nor was I downing any bubbly Irish brew – but I did ‘Go Green’. Unlike a few years ago when I was pub-hopping in my ‘Kiss me I’m Irish’ tee just for some kicks, this year was a little – well a lot- different. It was still very much green only it took place in my kitchen with me in an apron. Continue reading

Omani Green Banana with Coconut (Paleo!)

DSC07175

A couple of weeks ago, I had the pleasure of visiting a dear friend of mine in Muscat, Oman. And to kickoff the weekend, she prepared a mouth-watering home-cooked lunch to give me a taste of the local cuisine. For a bona fide foodie like my self, it was ideal way to start the holiday.
