The recipe you’re about to read was a result of me having a very naughty cheat meal at the infamous Shake Shack a couple of months ago. When my husband & I munched into their ‘shroom Burger, we were immediately transported to junk food heaven. I absolutely love beans – be it chickpeas, lentils, Fava or black beans. But my favorite of them all is Cannellini. They are medium-sized white beans with firm texture, slightly nutty and creamy in flavor. Because they hold their shape so well, they’re ideal for healthy dishes such as soups, salads and stews.
