Pan-seared Halloumi & Lentil Salad

Being such a universally loved food, cheese seems to be a common cause of weight loss catastrophe for so many people I know.  This is primarily due to their high contents of saturated fat and excessive sodium.  Good news is, you don’t have to eliminate this mouthwatering delight from your diet completely because different types of cheese vary in total fat content from 9% in cottage cheese and up to 34% in parmesan.  Since there are so many varieties available, you just have to be selective and consume them in moderation.     Continue reading

Portobello Marinara

Every once in a while, vegetarians crave something ‘meaty’.  It might not necessarily be the taste of meat per se but rather its texture and heftiness.  Well, my herbivore friends, a nice juicy piece of portobello mushroom is about to become your best food friend and oh, you’re also about to love me for this awesome recipe. 5 (Roasted) Super Seeds Salad

DSC09589

A couple of weeks ago I had the privilege of attending a friend’s wedding in a little town called Montreux located at the foot of the Swiss Alps.  During my stay at a beautiful lake side hotel, I sampled a hearty Seeds Salad that I’ve not been able to forget. Continue reading

With the temperature rising so rapidly, especially here in Dubai, summer seems to be approaching fast & fiery. Lucky for us, mangos are back in season to help us cope with the unforgiving heat. Continue reading

Stuffed Thai-Style Omelette

thai omelette

As you may already know from my previous blog post, I was recently in Thailand for a short holiday. So it’s only fitting that I share with you a dish that is one of the nation’s staples and also mine. Thai Omelette or ‘Kai Jeaw’ as the locals call it – although conceptually similar to the French version, it’s less refined but packed with a lot more zing.

Having had a few handfuls of fresh mint leaves and baby spinach left in the fridge along with a new packet of Cacao Butter from my favourite superfood brand Be Super Natural, it was time to make some yummy raw chocolates. For those of you thinking ‘hold up, chocolate and spinach in the same sentence?’, yes – I did just say that. Continue reading

zucchini pasta

Zucchini ‘Pasta’ w/ Walnut-Pesto Sauce

zucchini pasta

A few weeks ago I bought this really cool spiralizer that turns vegetables like potato, butternut squash & zucchini into ‘noodles’. I finally came around to experimenting and the result? A healthier, vegan, grain-free and gluten-free alternative to standard pasta that’s much lower in carbs! Continue reading

Glow-riously Green Super Smoothie

Since this past Monday was St. Patrick’s day, I decided to have my own little commemoration despite the fact that I have no Irish in me whatsoever. But hey, nothing wrong with getting into the spirit of things right? I did not wear any shamrock nor was I downing any bubbly Irish brew – but I did ‘Go Green’. Unlike a few years ago when I was pub-hopping in my ‘Kiss me I’m Irish’ tee just for some kicks, this year was a little – well a lot- different. It was still very much green only it took place in my kitchen with me in an apron. Continue reading

Firstly, a big apology for my disappearance! Over the last couple of weeks, I attempted to Tango in Buenos Aires, went vintage car sighting in Colonia del Sacramento, witnessed the magnificent Iguazu Falls and joined the Samba madness at the Carnaval in Rio!. In addition to all this fun, I of course, sampled plenty of yummy food that South America had to offer. And the biggest surprise of all? There’s finally a vegetarian/vegan food movement happening in the meat-dominant culture! Continue reading
